An artichoke is an unopened flower bud
The part of a globe artichoke that people eat is a young flower bud. Thick green bracts protect its tender center; if the bud stays on the plant, it opens into a large violet-blue flower.
The familiar green globe is simply the flower while it is still buttoned up.
